Raf coffee is a hot mixture of espresso, cream and vanilla sugar, whipped with an espresso machine's steam outlet in a pitcher. Its main feature is that if for all other espresso-based drinks milk and creamy ingredients are prepared separately and added at the very end, then when preparing raff coffee, all components are mixed and whipped immediately.

The special charm of this drink is in the airy vanilla-cream foam. Rough coffee is served in the same volume as a traditional cappuccino.

What is raff coffee: the history of appearance

The history of the classic recipe for this drink goes back to the mid-90s. Small coffee shop "Coffee Bean", located near the metro station "Kuznetsky Most" in the Russian capital, in 1996 made a splash among true connoisseurs of coffee. It was one of the first establishments with three dozen varieties of coffee beans and its own espresso machine. Today, this does not surprise anyone even in a small village, but then the Coffee Bean became a real culture shock.

Naturally, the coffee house almost immediately had regular guests, each of whom had his own wishes and habits. Most of them were limited to small requests, but one of the regular customers, Rafael, did not drink the coffee presented on the menu. Then the barista "Coffee Bina" was specially invented for him whip espresso together with vanilla sugar and 11% cream. Over time, many of Rafael's friends began to order "coffee like Rafael", "like Rafa". This is how the name "raff-coffee" appeared, which first appeared on the "Coffee Bina" menu, and then found its admirers not only in Russia, but also abroad.

Rough coffee recipes

Over the almost twenty-year history of raff coffee, in addition to the classic, many other recipes have appeared. Next, we will talk about how to cook lavender, honey and other variations this delicious drink.

Classical

The composition of 1 cup of classic raff coffee includes the following products:

  • 5 g vanilla sugar;
  • 100 ml of 11% chilled cream;
  • 25 ml espresso;
  • 5 g of regular sugar;
  • 1 g cinnamon.

Cooking:

  1. Prepare the necessary ingredients and utensils.
  2. Pour the cream into the pitcher, put both types of sugar.
  3. Make an espresso and also pour into the pitcher.
  4. Beat all the ingredients with a steamer until an airy foam is obtained.
  5. Warm up a cup or glass, pour the drink.
  6. Garnish with cinnamon and serve.

Lavender

Composition of 1 serving of lavender raff coffee:

  • 100 ml of cold filtered water;
  • ½ teaspoon lavender flowers;
  • 1.5 teaspoons of any ground coffee;
  • 1 teaspoon of granulated sugar;
  • 100 ml of 11% cream.

Step by step recipe:

  1. Pour coffee into a Turk, put on a slow fire, fill with cold water.
  2. Bring to a boil, but do not boil, but immediately remove the drink from the stove.
  3. Grind sugar along with lavender flowers.
  4. Put the resulting mixture in coffee and stir.
  5. Pour in the cream and heat the coffee on the stove for a couple of minutes.
  6. Beat coffee with a blender or cappuccinatore until a dense foam is formed.
  7. Pour the mixture into a bowl and serve immediately.

A small note: coffee does not have to be prepared in a Turk, you can make it in any convenient way. For example, in a coffee machine or a French press.

Honey

The preparation of honey raff coffee will require the following components:

  • 50 ml espresso;
  • 1 teaspoon of honey;
  • 100 ml of 11% cream.

To enjoy the soft and delicate taste of honey raff coffee you need:

  1. Brew espresso in any way.
  2. Heat up the cream, pour it into the coffee and stir.
  3. Put honey.
  4. Beat with a cappuccinatore until a dense, thick foam is formed.
  5. Garnish with a pinch of cinnamon and serve in cappuccino cups.

Citrus

For citrus raff coffee you will need:

  • 50 ml espresso;
  • 5 g vanilla sugar;
  • 100 ml of 11% cream;
  • 5 g orange sugar.

The citrus version is prepared in the same way as the classic one. Lemon-lime slices are used for decoration.

Orange

To prepare orange raff coffee, you need to take the same ingredients as for the citrus recipe, and add 2 teaspoons of freshly squeezed orange juice to them. Juice must be added to the pitcher along with all other components. For decoration, it is better to use orange slices, and a pinch of cinnamon will emphasize the pleasant astringency against the background of vanilla-creamy taste.

You can serve raff coffee not only in the same style as cappuccino, but also as latte macchiato, pouring into large transparent glasses. With such a serving, a creamy vanilla foam cap will look especially impressive.

If you want to enjoy more than 180 ml, then you need to use 2 shots of espresso. Sugar and cream should be calculated taking into account the volume of dishes used. Too heavy cream can be simply diluted with water before mixing in the pitcher. Those coffee lovers who are not very fond of vanillin need to be careful with vanilla sugar, as it is very easy to overdo it with its amount. In this case, you can even reduce the required amount from 5 g to 3 g per serving of classic raff coffee.

A coffee machine is not always at hand, and since you need to prepare raff coffee based on espresso, you can use an alternative method by brewing coffee in a French press or Turk. Just before mixing, the brewed drink should be filtered, as grinding particles can spoil the impression of the drink. Although, this is a matter of taste, you can do without filtering. To make raff coffee hot, the cream needs to be heated in the microwave for 2 minutes at a power of 800. Moreover, you can immediately put vanilla sugar in the cream, so it will dissolve faster. You can beat raff coffee even in the absence of a cappuccinatore, using a blender or even an ordinary whisk. The main thing is that the result of whipping is air foam. Of course, raff coffee prepared in this way will be somewhat different from its classic version, but it will also give you some pleasant moments.

Raf coffee appeared relatively recently, and its birth was spontaneous, so you should not be afraid to experiment when preparing it, adding new, previously unused ingredients.

"Raf coffee" (or simply "Raf") is a hot drink made from espresso, cream and two types of sugar - vanilla and regular white. All ingredients are mixed and steamed in a pitcher (milk jug).

They came up with this drink in Moscow, in the Coffee Bean coffee shop. One of the visitors, whose name was Rafael, did not like regular coffee, and the barista decided to whip up an espresso with cream and vanilla sugar for him. Other regulars of the establishment also began to ask for coffee, "like for Raf." The drink turned out to be very successful, and a few years later it appeared in other coffee shops. At the same time, its name was reduced to "Raf-coffee".

  • It is advisable to preheat a cup or glass for a drink with steam.
  • If you only have fat cream, 30-33%, dilute it with milk (1:2).
  • Vanilla sugar can be replaced with vanilla in a small amount (at the tip of a knife). Remember that if you overdo it with vanilla, the coffee will be very bitter.

What does coffee raf mean

What is its difference from a traditional drink, how to brew raff coffee and what is it? It consists of ready-made espresso, cream and vanilla sugar. Coffee dessert is airy and very tasty.

Usually the ingredients for espresso-based drinks need to be prepared separately. When preparing raff coffee, all components are combined immediately and whipped in a pitcher.

Previously, it was brewed in a cup, gently mixing all the ingredients. It is thanks to this method of preparing coffee that it turns out to be light and pleasant in taste, unlike other drinks.

Raf coffee is a high-calorie dessert. Because it contains sugar and cream. If you tend to be overweight or are on a diet, you'd better stop drinking this coffee.

Particular attention should be paid to serving coffee. Raf is served in a tall cocktail glass, like a latte.

Who Invented Raf Coffee

About twenty years ago, an airy drink was prepared for the first time in Russia. The perfect combination of ingredients every year makes raff coffee very popular. Now, in every worthy establishment you can try a cup of fragrant vanilla delicacy.

In the late 1990s, coffee bean was the first place where raff coffee was made. Then, a visitor to the cafe Rafael for a long time could not choose any of the drinks from the assortment of the cafe menu. The barista suggested that the guest mix espresso, vanilla sugar and cream in one cup. Rafael liked this original coffee. He began to visit Coffee Bean very often. Alone or with company, Rafael always ordered this cocktail.

Over time, other patrons began to order "Drink, as for Raphael." Some asked to bring them a Raf-like cocktail. So they began to call the famous Raf coffee, the recipe of which has already become known in many countries. After a while, baristas began to experiment and add different ingredients to the drink.

Previously, as we already wrote, the drink was prepared in a cup, and now it is whipped in a pitcher. A pitcher is a tall metal mug for frothing milk or cream. Many coffee machines are equipped with cappuccinators. They are designed to whip milk into a high stable foam. Professional baristas prepare the air mass in the pitcher, which is used to decorate various drinks.

Raff coffee recipes

Over the years of existence, they have come up with a lot of different recipes. Everyone prepared a drink with their favorite additives, which made its taste and aroma always different. Today, each cafe or restaurant prepares raff coffee according to an individual recipe. And there are a lot of them, everyone is looking for their own option.

Classic coffee raff

This is the basic recipe followed by many baristas. Prepare these ingredients:

  • Twenty-five milliliters of espresso;
  • Half a glass of cream, ten percent fat;
  • A teaspoon of vanilla and regular sugar.

First, prepare tall glasses for a beautiful serving, preheat them. Mix the sugar in the cream pitcher and the finished espresso. Lower the cappuccinatore into a container and beat until a high foam is obtained. Pour the coffee into glasses, garnish with a cocktail straw and serve.

Don't worry if you don't have a coffee machine. Raf coffee can be made at home in a Turk or a French press. Brew espresso in Turkish and strain. In a large container, mix all the ingredients and beat the mass with a blender or mixer. When the air foam rises, pour the drink into glasses and enjoy its taste.

For sweet tooth and nut lovers, this drink will be perfect. It contains peanut butter, which makes the taste rich with nutty notes. Such a raff can be prepared for children, they will appreciate the dessert. Ingredients:

  • a cup of espresso;
  • a tablespoon of peanut butter;
  • Half a glass of milk;
  • Cane sugar.

In a pitcher, mix the pasta with a little water. Add sugar (you can use caramel syrup instead of cane syrup), warm milk, espresso and stir. Beat the mass with a cappuccinatore or mixer. Serve, decorating as you wish.

orange coffee

Treat your loved ones and friends, brew a drink following the recipe. Prepare:

  • A cup of brewed espresso;
  • Twenty milliliters of orange juice;
  • A glass of heavy cream;
  • Twenty milliliters of vanilla syrup.

Brew espresso from fresh coffee beans in a coffee machine or Turkish coffee machine. In a container, combine the warmed cream, ready-made coffee, orange juice, vanilla syrup and beat with a cappuccinatore (or mixer). Serve the raf in beautiful latte glasses, garnishing with a straw and a slice of citrus.

Cheese raf

A recipe for those who like the combination of cheese and coffee. Its original spicy taste will appeal to many cheese lovers. Prepare the following ingredients:

  • One hundred milliliters of low-fat cream;
  • Fifty grams of soft cheese;
  • One hundred milliliters of espresso;
  • Nutmeg, cinnamon, ginger.
  • Sugar and salt to taste.

Cheese can be chosen according to your taste, mascarpone, philadelphia, cottage cheese are well suited.

Dilute cheese in warm cream. Put the spices into the pitcher, pour in the hot espresso, creamy mass, add sugar and a pinch of salt. Beat the mixture until a homogeneous mass and stable foam are obtained.

lavender raff

A lot of people like the recipe for coffee raff with lavender notes. Be sure to prepare, you will need the following components:

  • A cup of brewed espresso;
  • Spoonful of sugar;
  • Several lavender flowers;
  • Two hundred and fifty milliliters of cream.

First, combine sugar with lavender flowers and grind until juice appears. Then add hot espresso and warm cream. Take cream with a fat content of at least ten percent. Beat the mixture with a cappuccinatore or mixer until stable peaks form. Garnish the finished puffed raff with lavender and serve in a cappuccino glass.

Raff coffee with honey

To prepare a honey delicacy, you will need the following ingredients:

  • Fifty milliliters of brewed espresso;
  • Half a cup of cream.

In a pitcher or other tall bowl, mix hot 15% cream with a teaspoon of honey and espresso. Beat until a stable creamy foam is formed. Decorate the airy dessert with cinnamon.

Honey raff is widely known among coffee lovers and takes second place after the traditional one.

Calorie raff coffee

  1. put ground coffee in (or);
  2. pour 100 ml. purified cold water and set to minimum heat;
  3. bring the drink to a boil (do not boil!);
  4. pour slightly warmed cream into the drink;
  5. grind sugar to the state of powdered sugar;
  6. grind lavender flowers and add to powdered sugar;
  7. pour powdered sugar with lavender flowers into a drink;
  8. with a blender (or cappuccino machine), beat the lavender raff until foam is formed;
  9. pour into a glass and serve to the table (or try without leaving the stove).

Coffee culture was not born in our country: we know that latte is an Italian invention, while pourover or hario is Japanese. It is easy to imagine that raff coffee, which is on the menu of almost every Moscow coffee shop and is increasingly found in other cities of Russia, originally came to us from other countries. However, the editors of The Village have never seen raf on the menu of European, American or Asian coffee shops. In addition, the name itself is not found in other languages.

So who first came up with this coffee drink? Ekaterina Arkhipova, director of public relations of the Coffeemania chain, general director of the Omsk chain of coffee houses Skuratov Coffee Viktor Skuratov, head barista and co-owner of coffee houses Anastasia Godunova, and head barista of the Doubleby coffee house chain Bogdan Prokopchuk.

Raf is a purely Moscow invention. It was invented in 1996–1997 at Coffee Bean, the first coffee shop in Moscow to be opened according to the American model. When one of the regular guests, Rafael, asked him to come up with something, three baristas - Gleb Neveykin, Artyom Berestov and Galina Samokhina - prepared coffee with cream and vanilla sugar. The drink began to be called "raf". After that, the first Coffeemania opened in Moscow, and the barista team moved there. Raf continued to cook in a new place. The recipe hasn't changed.

Gleb became the director of the barista department and the chief roaster of the Coffeemania coffee shop chain, now I don’t know anything about Artyom, and Galina works in the coffee industry. We didn’t really keep track of when and in which coffee shops raf began to appear, but now it is available almost everywhere, and not only in Moscow.

For example, Tatyana Elizarova, who taught us how to roast coffee, started her career at Coffee Bean, where this drink was invented. And, most likely, we learned about Rafa from her. But at the same time, we regularly visited Moscow and, perhaps, saw him in Caffeine or Coffeemania. Now it is almost impossible to find the ends where we first met this drink. We decided to introduce it into our menu for a simple reason - we liked it. And we thought that the tastes of Omsk residents do not differ much from the preferences of Muscovites. And in general, that's how it happened. In our brew bars, raff is as popular as latte or espresso.

I heard this story - just like everyone who deals with coffee: there was a certain guest, after whom the drink was named. I learned about raf when I was still working at Caffeine and brewing coffee there. From there, variations of raf went - citrus, lavender and so on.

But I try not to cook raff on my shifts in coffee shops - I am for the natural sweetness of milk or other ingredients that emphasize the taste of espresso, and sugar is added to the raff. I prefer cappuccino or flat white, which has already become a cult in Good Enough. They have different cooking techniques but are sweet without sugar due to the delicious milk and the sweetness of the espresso.

There was a Coffee Bean coffee shop for a long time, and Rafael was a regular guest there.

He drank cappuccino, but once asked to use cream instead of milk, add sugar and whisk everything together (cappuccino is prepared separately: milk is whipped separately and poured into espresso without adding sugar). Subsequently, many of his friends appreciated this drink and began to call it “like Rafu”, but it sounded strange, so they simply shortened it to “rafa”. The result is a coffee drink that tastes like melted creme brulee ice cream (if we talk about the classic raf based on vanilla sugar). There are also varieties of rafs in which experiments are being made with the composition of sugar: lavender - white, vanilla and dried lavender flowers, citrus - cane with orange and lime peel.
