What is kombucha?

Many of us must have heard of kombucha. And how pleasant it is to quench your thirst in the summer heat with cool tea kvass, “cooked” by a living creature resembling a jellyfish! It is also assumed that kombucha first appeared first in China. There is evidence that during the reign of the Qin dynasty, and this is 221-207 BC, they began to prepare a divine drink from this product, which had magical powers.

Only kings and high-ranking persons could drink it, but their subjects did not even dream of it. Kombucha gradually migrated from China to neighboring countries: to Japan, then to Korea - and only then came to Russia.

The scientific name of kombucha is jellyfish (Medusomyces Gisevi). It was given to him by the German mycologist Lindau, who in 1913 compiled the first complete scientific description of the fungus. It is also called: Japanese mushroom, Japanese uterus, "Manchurian" mushroom, Kombuha mushroom, fango, sea kvass, tea jellyfish. Despite the fact that the kombucha has nothing to do with the jellyfish, for its outward resemblance to it, it was called a medusa mycete.

Kombucha is a real living laboratory in which two different microorganisms coexist quite well: yeast fungi, mainly from the genus Torula, and acetic acid bacteria. Together they create a huge colony, resembling a jellyfish in its outline, yellowish-brown in color. Like the jellyfish, the upper part of this colony is shiny and quite dense. The lower one is a rost zone with many threads hanging down.

It is in this very zone that the transformation of an ordinary sugar solution and tea leaves into a medicinal drink, which contains many useful and healing substances for the body, takes place. These are vitamins C, PP, D, group B, and organic acids (gluconic, lactic, acetic, oxalic, malic, citric), and various enzymes (protease, catalase, amylase) - organic substances of a protein nature with the properties of catalysts. They play an important role in metabolism, accelerate chemical processes in the body. Moreover, this is not even a complete list of valuable substances synthesized in this living laboratory. How to grow kombucha at home

First, we will talk about how to grow kombucha from scratch.

You will need a three-liter jar, gauze cloth, teapot, boiling water, sugar and large-leaf black tea leaves. Moreover, tea leaves should be the most usual, without any additives - the cheaper, the better.

The first thing to do is to wash the three-liter jar very carefully, which will become the place of residence of your mushroom. This is a must, as kombucha loves cleanliness. Otherwise, he will die, never having time to grow. And one more very important point: in no case do not use synthetic detergents to wash the jar - ordinary baking soda is enough.

Place 5 tablespoons of black tea in a teapot and pour ½ liter of boiling water over them, leave until the tea has completely cooled. Then add 7 tablespoons of sugar to the tea, mix thoroughly and strain with gauze. Pour the sweet strong tea leaves into a three-liter jar, cover it with gauze cloth on top and put it in a warm place for about a month and a half.

Somewhere in a week and a half, a strong vinegar smell will appear - this is completely normal, you will have to be patient a little. After 5-6 days, the smell will practically disappear, and a thin film will form on the surface of the liquid - this is Kombucha. Every day it will be thicker and thicker - the growth of the fungus does not stop all his life.

After a month and a half, when the membrane gets stronger, it must be transferred to a new jar and poured with cooled weak sweetened tea at the rate of 5 teaspoons of sugar per 2 liters of tea. Water for tea must be boiled, because raw water contains a lot of potassium salts, which can kill the fungus. Do not cork the jar with the mushroom, but simply cover it with a napkin. Keep away from a window as cold and direct sunlight inhibit the development of kombucha. The fungus will grow into a familiar firm texture and shape. According to some recommendations, the young embryo should be placed for several minutes in a weak solution of apple cider vinegar. And after that it can be sent to a permanent place of residence.

As a rule, kombucha lives in a fairly spacious container (for example, in a three-liter jar) with a wide mouth, filled with sweetened tea, the neck of the jar is necessarily covered with gauze.

How to care for kombucha at home

Caring for kombucha, as well as its breeding, is not particularly difficult. Nevertheless, there are some rules for caring for it. First of all, you should be aware that oxygen is necessary for its normal functioning, and therefore, in no case should you cover the dishes in which it is located with a lid. It is better to cover it with gauze folded in several layers. By the way, about the dishes themselves: it must certainly be glass, well transmitting light. Please note: it is light, and not direct sunlight, which is harmful to the fungus. It is better to put it in the shade than in a place open to the sun.

Most of all, a two- or three-liter jar with a wide neck is suitable for breeding kombucha. It is desirable that there are two such cans: one for the fungus, the other for the finished drink.

The infusion from the fungus should be drained every 2–3 days, in winter a little less often - after 5–6 days.

Ready infusion can be stored tightly closed in the refrigerator or in the cellar for quite a long time.

Kombucha solution

For normal growth and development, the fungus must be kept not in ordinary water, but in a solution of tea with sugar. Such a solution is prepared as follows: the tea leaves already used for making ordinary tea are once again poured with boiling water, slightly cooled and filtered through a tea strainer so that no floating leaves remain in the liquid. Then 1 liter of such water is slightly heated. This is done in order to make it easier to dissolve 100–150 g of sugar in water. It is impossible for sugar to lie at the bottom of the jar or not be completely dissolved - this is harmful to the fungus.

How to pour kombucha

When the sweetened water has cooled, it is added to the jar, where the medusomycete is already located. In no case should sugar be poured directly into the jar on the mushroom, as many do. Sugar in an undissolved form can harm him, leaving burns on his mucous membrane, because of which he will gradually die.

In order to speed up the process of growth of the fungus, you can do it in a different way. Taking a clay pot, fill it with 3 liters of warm tea (brewing). Then add sugar - for each liter of liquid 100 g of sand. Sugar should be thoroughly mixed, add a cup of a ready-made drink as a starter, and only then place kombucha on the surface of the water.

Kombucha does not pop up

Do not be afraid that after the next complete change of water, your mushroom will sink down and lie at the bottom of the jar, as if dead. In a couple of days, he will again acquire buoyancy, and after two weeks, he will almost completely fill the entire free area with himself. But first he must adapt, get used to the new solution for him.

Mold on kombucha is quite rare (due to the production of secondary metabolites), but if the rules of care are violated, it can still affect the fungus. How to wash kombucha

Rinse with warm (not hot!) boiled water and fill it with a new solution according to the following scheme: in summer - once every 3-4 days, in winter - once every 5-6 days.
